The Man with the Hat is a tribute to Savino Muraglia Senior, the man who inherited those 40 hectares of olive trees, the leafy branches of which kissed the sky of the Alta Murgia. That man in the hat decided not to listen to those who tried to dissuade him from his dream: to create an oil mill that would be able to pass on – over the centuries – the scents, flavours and excellence of Apulian know-how.
